I love my make-ahead meals week! It is so satisfying to have a months worth of work and mess done and over with all in one shot! This menu will make us 24 meals – I triple all the beef & chicken recipes, except the shredded chicken. With that I’ll have enough for 6 meals. Cookies will keep the kids lunches full and snacks will save us on convenience foods.
1) Garlic Ginger Chicken Strips
2) Bacon Wrapped Chicken
3) Shredded Chicken Breast – timesaver. This goes in several other recipes, like:
a. Curry Chicken Salad or Marshall Field’s Chicken Salad
b. Chicken and Rice Casserole
c. Favorite Chicken Casserole
I make the dough, roll it in plastic wrap and place it in a freezer bag. Once it’s frozen, I can just slice and bake. Fresh cookies for the kids lunches all month long!
