This week I’ll be taking advantage of some of the Make Ahead Meals in my freezer and adding a few easy meals.
Breakfasts – this is the typical cereal, eggs, toast. But on the weekends we’ll be having:
~Overnight Apple French Toast – I love breakfast meals I can make the night before!
~Bacon n Egg Biscuits
Lunch – it’s just me and the baby at home, so I’ll grab simple meals of soup, grilled cheese, etc. Here are our weekend lunches:
~Chicken Wraps
~Spicy Cheeseburger Soup – cheeseburger in par-a-dise!
Here are our school lunch treats:
~Crumb Topped Banana Muffins
~Pita Chicken Sandwiches – I sub mayo for yogurt
~Sandwich on a stick
~Bagel/cream cheese – and so they get their protein, I include an apple with some peanut butter for dip. They love it.
We found bread cutters shaped like dinosaurs and hearts at the grocery store. So even if it’s plain ole PB&J, it’s still cool. HERE is another idea for sandwich shapes.
I have my stash of cookie dough to make them through the week. One of the weekday lunch treats will be my own concoction: lunchbox smores. I put Keebler Fudge Graham cookies (which are essentially chocolate covered graham crackers) and mini marshmallows in a sandwich bag so they can make their own fun dessert at school!
The healthy stuff is easy. They love apples, bananas, oranges, grapes, celery/pbutter, carrots.
Dinner – Thanks to my freezer stash, I only need to make two dinners from scratch:
~Asparagus Beef Stir Fry & rice
~Chicken Penne Casserole & veggie
Sweet Treats
~Strawberries & Cream Bread
~Apple Salsa with Cinnamon Chips
