This is my once-a-month cooking week. This list is enough for about 24 dinners. I make three meals worth out of each beef and chicken meal listed (except the shredded chicken, which will make 6 meals). The cookie dough will keep the kids lunches full all month, and the snacks will save us money because we won’t be buying convenience food! Here I go!
BEEF
1) Meatballs – use your favorite recipe
2) Hamburger Patties – shape raw ground beef into patties & freeze.
3) Freeze Ahead Steak Fajitas
4) Meat Sauce for a Crowd – use for Baked Ziti and spaghetti
CHICKEN
1) Cowboy Chicken Casserole
2) KFC Twisters – for freezing, I cut up the chicken and place it in a freezer bag with the marinade (I add a dash of hot sauce). The rest is done fresh.
3)Shredded Chicken Breast – timesaver. This goes in several other recipes, like:
a. Curry Chicken Salad or Marshall Field’s Chicken Salad
b. Chicken and Rice Casserole
c. Favorite Chicken Casserole
COOKIES
I make the dough, roll it in plastic wrap and place it in a freezer bag. Once it’s frozen, I can just slice and bake. Fresh cookies for the kids lunches all month long!
1) M&M Peanut Butter Cookies
2) Lemon Sugar Cookies
3) Chocolate Chip Cookies
FAMILY FAVORITE SNACKS
1) Par Baked Pizza Crust & Homemade Pizza Sauce
2) Beef Taquitos - I add a dash of hot sauce to the recipe – somewhat bland without it.
3) Tuna Turnovers

Sounds great! I’m trying to get better at the OAMC thing–it is definitely a time saver. I will have a lot of leftover chicken from one of my meals this week–thanks for the KFC Twister link. That sounds awesome!
Hope you have a great week getting it all prepared! I did the cookie dough freezer thing this week and LOVE it! I have to bake the boys’ GFCFSF cookies, and this makes it sooo much easier!

I actually just started making a couple of meals on my days off that I can keep in the fridge. That way we can just heat them up after a long day at work.
