Menu Plan Monday – Make Ahead Meals

Okay I am all moved in and settled in my new home. No more excuses. Time to get back to my once-a-month cooking plan. I love OAMC, because I don’t love to cook. If I can avoid the hassle and the mess several times a week, I’m all for it. On top of that, it saves me time. I can make four casseroles in nearly the time it takes me to make one.

You might be suprised to know that I’m a very finicky eater. My initial impression of OAMC was that I might be eating food that was dry, unappetizing or had a strange texture because it wasn’t fresh. Sometimes that’s true. But since I’ve been doing this awhile, I’ve learned what freezes well and what doesn’t. So I can vouch for these dishes. You’ll love ‘em and your family won’t know the difference!

MASTER LIST:

Beef:
1) Meatballs – use your favorite recipe
2) Mexican Stuffed Shells
3) Boston Market Meatloaf - I freeze this uncooked
4) Crock Pot Chili

Chicken:
1) Salsa Dump Chicken
2) Eggrolls – I sub chicken for pork.
3) Murder Mystery Chicken - this is a new one for me.
4) Shredded Chicken Breast – timesaver. This goes in several other recipes, like:
a. Curry Chicken Salad
b. Chicken and Rice Casserole
c. Favorite Chicken Casserole
d. Chicken Salad Sandwiches

Cookies:
I make the dough, roll it in plastic wrap and place it in a freezer bag. Once it’s frozen, I can just slice and bake. Fresh cookies for the kids lunches all month long!
1) Chocolate Chunk Cookies
2) Butterscotch Chip Cookies
3) Best Sugar Cookies

And our freezer would not be complete without the family favorite snacks:
Par Baked Pizza Crust & Homemade Pizza Sauce.
Beef Taquitos – I add a little hot sauce to the recipe to give it some zing!

If I have time, I’ll attempt the Homemade Pizza Rolls. Gonna skip the olives and pineapple though.

What a great variety of recipes! I love them especially since we’re mostly a beef and chicken household :)

I’ll definitely be trying these out too.

P.S. We call Egg rolls “Spring Rolls” in Australia. Or at least in my family :)
