This is one of the most requested snacks at our house. If you’ve never made homemade caramel corn before, you need to try this recipe at least once!
Ingredients:
- 8 cups popcorn (already popped)
- 1 cup peanuts
- 3/4 cup light brown sugar
- 6 T butter
- 3 T light corn syrup
- 1/8 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp vanilla extract
Directions:
- Mix brown sugar, butter, corn syrup and salt in saucepan. Cook, stirring constantly until mixture starts to boil. Continue cooking on a light boil for an additional 5 minutes without stirring.
- Remove from heat. Stir in vanilla, baking soda and peanuts.
- Pour over popped popcorn and stir until evenly coated.
- Bake at 250 degrees for 20-25 minutes, stirring every 5-7 minutes.
- Let cool thoroughly. Break apart and enjoy!
