Lunchbox Love: World’s Best Caramel Corn

This is one of the most requested snacks at our house. If you’ve never made homemade caramel corn before, you need to try this recipe at least once!

 Ingredients:

  • 8 cups popcorn (already popped)
  • 1 cup peanuts
  • 3/4 cup light brown sugar
  • 6 T butter
  • 3 T light corn syrup
  • 1/8 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp vanilla extract

Directions:

  1. Mix brown sugar, butter, corn syrup and salt in saucepan.  Cook, stirring constantly until mixture starts to boil.  Continue cooking on a light boil for an additional 5 minutes without stirring.
  2. Remove from heat.  Stir in vanilla, baking soda and peanuts.  
  3. Pour over popped popcorn and stir until evenly coated.
  4. Bake at 250 degrees for 20-25 minutes, stirring every 5-7 minutes.
  5. Let cool thoroughly.  Break apart and enjoy!

Yum-O! Who doesn’t love caramel corn??!?!? I love making this around the holidays. Your recipe it very similar to the one I use from BH&G. Thanks for sharing on “Amaze Me Monday”.
