Slow Cooker Pasta Fagioli

Ingredients
  • 1 tablespoon olive oil
  • 1 pound spicy italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5-oz) can diced tomatoes with juices
  • 1 stalk celery, diced
  • 1 tablespoon oregano
  • 2 teaspoons basil
  • 6 cups chicken stock
  • 1 (16-oz.) can white kidney beans, drained
  • 1 cup small shell pasta
  • parmesan cheese
Instructions
  1. In a skillet, heat olive oil.
  2. Add sausage, cook and crumble until no longer pink.
  3. Add cooked sausage along with all remaining ingredients except pasta and parmesan to slow cooker.
  4. Cook on low 6-7 hours or high for 3-4 hours. Add uncooked pasta and continue to cook for an additional 1 hour or until pasta is cooked.
  5. Serve in individual bowls with a sprinkle of parmesan cheese.
